Update - 10/24 San Francisco has lost another Michelin Star gem
Aphotic, a new restaurant that opened on March 21, 2023, has been awarded a Michelin star. The restaurant is located in the same space where Palette used to be, and it's a tribute to seafood. The name Aphotic, which means "without light," is inspired by the ocean's depths where less than one percent of sunlight penetrates. This name reflects the restaurant's focus on underutilized fish and sustainable sourcing.
The restaurant's interior has been completely remodeled to match its theme. The dining room is circular and features custom walnut woodwork, bronze and glass light fixtures, and around 2,500 pounds of driftwood lining the bathroom walls. Aphotic offers a 10-course tasting menu for $135, with an additional $95 for wine pairings. The wine collection is extensive, with around 7,000 bottles, focusing on coastal wines, Champagne, vintage and new French and California wines, as well as many from around Europe.
The restaurant's menu shows a heavy Japanese influence, and the seafood is sourced directly from quality aquaculture practitioners and fisher(wo)men, focusing on seasonality. The restaurant also has a Type 74 Craft Distillers License, allowing them to house distill using different West Coast foraged ingredients, as well as sourcing coastally-distilled spirits from across the globe.
The restaurant is already being recognized for its commitment to sustainability and its unique seafood offerings. The Michelin star is a testament to the quality of the food and the overall dining experience at Aphotic.
